You can, but I would add a bit of water to it since the alcohol to water ratio in isopropyl alcohol is typically higher on the alcohol side. I would add a half a cup of water to the 8oz to make it closer to the proof of the vodka and so you can get the most of the properties of the herbs that are water AND alcohol soluble 🙂
